Single Serve Hunters Chicken

Homewrecker Hunter’s Chicken… a British pub classic with a Southern twist.

Ready in 25 minutes, this is gonna hit those comfort food cravings quicker than a cat on a hot tin roof.

Ingredients

  • 1 Chicken Breast

  • 3 tbsp Homewrecker Pimento Cheese

  • 4 rashers streaky bacon

  • 4 tbsp BBQ Sauce

  • A handful of oven chips

  • Tenderstem Broccoli 

Method

  1. Preheat your oven to 200°C (180°C fan).

    Carefully slice a pocket into the side of the chicken breast, being careful not to cut all the way through. Spoon 1 tbsp of Homewrecker Pimento Cheese inside, then press the edges together to seal.

    Wrap the stuffed chicken in streaky bacon, overlapping the rashers slightly. Place on the baking tray and cook for 15 minutes.

    While the chicken bakes, cook the oven chips according to packet instructions.

    Remove the chicken from the oven and brush generously with @stokes_sauces BBQ sauce and top with the remaining 2 tbsp Homewrecker.

    Return to the oven for another 7-10 minutes until the bacon crisps up, the cheesy is melted and golden and the chicken is cooked through.

    Steam or boil the tenderstem broccoli for 3–4 minutes until just tender.

    Plate up with crispy chips and tenderstem broccoli, then dig in!
