Single Serve Cajun Chicken & Rice
Cooking for one? It’s time to spice up those solo dinners.
This creamy Cajun chicken is bringing the heat, alongside a hefty dose of Homewrecker.
Plus, it’s all made in one pan so minimal washing up… what’s not to love?
Ingredients
1 chicken breast
½ green pepper, sliced
½ small onion, sliced
½ stick of celery, finely chopped
1 tbsp Cajun spice
1 tsp flour
125ml whole milk
1 tbsp crème fraîche
1 heaped tbsp Homewrecker Pimento Cheese
Fresh parsley, to serve
Rice, to serve
Method
Heat a drizzle of oil in a pan. Add the chicken, seasoned with Cajun spice, and cook until golden. Remove and set aside.
In the same pan, sauté the onion, pepper, and celery until softened.
Stir in the flour, then gradually pour in the milk, stirring until thickened.
Add crème fraîche and Homewrecker, letting it melt into a creamy sauce.
Return the chicken to the pan, simmer for a couple of minutes, then serve over rice with fresh parsley.v
