SINGLE SERVE Cheesy Sausage Broccoli Pasta

Crispy sausage, garlicky goodness, and a lil’ kick of heat, all smothered in a rich, melty Homewrecker sauce.

Toss in some tenderstem broccoli so Mama can’t say you didn’t eat your greens, and top it off with a heaping shower of Parmesan. 

Ingredients

  • 2 sausages, casing removed

  • 1 clove garlic, minced

  • ¼ red onion, finely sliced

  • ¼ tsp chilli flakes (adjust to taste)

  • Splash of white wine or water (about 30ml)

  • 100g Tenderstem broccoli, chopped into bite-sized pieces

  • 2 tbsp Homewrecker Pimento Cheese

  • 90g pasta of choice

  • Pasta water, reserved (about 50ml)

  • Parmesan, grated, to serve

  • Salt and pepper, to taste

Method

  1. Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve some pasta water before draining.

  2. Heat a pan over medium-high heat and add a splash of oil. Squeeze the sausage meat out of the casing and break it up in the pan. Cook until golden and crispy, about 5-6 minutes.

  3. Add the sliced red onion and garlic to the pan. Sauté for 2-3 minutes until softened. Sprinkle in the chilli flakes and stir for another 30 seconds.

  4. Pour in a splash of white wine or water, scraping up any browned bits from the bottom of the pan. Let it bubble for a minute to cook off the alcohol.

  5. Add in the broccoli and a splash of pasta water to help cook the broccoli through.

  6. Reduce the heat to low and stir in the Homewrecker Pimento Cheese. Add a splash of the reserved pasta water to create a smooth, glossy sauce.

  7. Toss the cooked pasta into the pan, stirring well to coat everything in the sauce. Season with salt and pepper to taste.

  8. Plate the pasta and top with a generous sprinkle of Parmesan and extra black pepper. Enjoy immediately!
