SINGLE SERVE Cheesy Sausage Broccoli Pasta
Crispy sausage, garlicky goodness, and a lil’ kick of heat, all smothered in a rich, melty Homewrecker sauce.
Toss in some tenderstem broccoli so Mama can’t say you didn’t eat your greens, and top it off with a heaping shower of Parmesan.
Ingredients
2 sausages, casing removed
1 clove garlic, minced
¼ red onion, finely sliced
¼ tsp chilli flakes (adjust to taste)
Splash of white wine or water (about 30ml)
100g Tenderstem broccoli, chopped into bite-sized pieces
2 tbsp Homewrecker Pimento Cheese
90g pasta of choice
Pasta water, reserved (about 50ml)
Parmesan, grated, to serve
Salt and pepper, to taste
Method
Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve some pasta water before draining.
Heat a pan over medium-high heat and add a splash of oil. Squeeze the sausage meat out of the casing and break it up in the pan. Cook until golden and crispy, about 5-6 minutes.
Add the sliced red onion and garlic to the pan. Sauté for 2-3 minutes until softened. Sprinkle in the chilli flakes and stir for another 30 seconds.
Pour in a splash of white wine or water, scraping up any browned bits from the bottom of the pan. Let it bubble for a minute to cook off the alcohol.
Add in the broccoli and a splash of pasta water to help cook the broccoli through.
Reduce the heat to low and stir in the Homewrecker Pimento Cheese. Add a splash of the reserved pasta water to create a smooth, glossy sauce.
Toss the cooked pasta into the pan, stirring well to coat everything in the sauce. Season with salt and pepper to taste.
Plate the pasta and top with a generous sprinkle of Parmesan and extra black pepper. Enjoy immediately!
