cheesy chicken quesedilla
Ingredients:

1 large flour tortilla
50g Homewrecker Pimento Cheese
1tbsp salsa
50g grated cheddar cheese
Cooked chicken, shredded or diced
Spring onions
Coriander
Sour Cream, to serve
Method
Place a large frying pan over medium heat. Allow it to heat up for a minute or two.
Take a tortilla and place it flat on the frying pan.
Spread half of the Homewrecker, cheddar cheese, chicken, spring onion and coriander.
Fold the tortilla in half.
Allow the quesadilla to cook for about 2-3 minutes on one side until the bottom tortilla is golden brown and crispy.
Carefully flip the quesadilla using a spatula, and cook for another 2-3 minutes on the other side until the cheese is melted and the tortilla is golden brown.
Remove the quesadilla from the frying pan and transfer it to a chopping board. Let it cool for a minute or two before cutting it into wedges.
Serve the quesadillas warm with salsa and sour cream on the side!
