HOMEWRECKER TACO SALAD
Ingredients:
Serves 4
500g beef mince
1 tablespoon taco seasoning
1 lettuce, shredded
1 cup tomatoes, diced
1 cucumber, diced
1 cup sweetcorn (fresh or frozen)
1 avocado, diced
1 pepper (yellow or red), diced
Jalapenos, sliced (optional)
Tortilla chips, crushed (or make your own!)
Coriander
For the pimento cheese dressing:
50g buttermilk
50g soured cream
3 heaped tablespoons Homewrecker Pimento Cheese
Juice of one lime
Salt and pepper to taste
Splash of water to loosen, if needed
Method
In a large frying pan, cook the beef mince over medium heat until browned. Drain any excess fat, then add the taco seasoning and stir well to combine. Cook for an additional 2-3 minutes. Remove from heat and set aside.
In a large salad bowl, combine the shredded lettuce, diced tomatoes, diced cucumber, sweetcorn, diced avocado, diced pepper, and jalapenos (if using). Toss everything together until well mixed.
To make the pimento cheese dressing, in a small bowl, whisk together the buttermilk, soured cream, Homewrecker, lime juice, salt, and pepper until smooth. If the dressing is too thick, add a splash of water to loosen it.
Pour the pimento cheese dressing over the salad and toss until the salad is evenly coated with the dressing.
Serve the taco salad in individual bowls or on plates. Top each portion with the cooked beef mince, crushed tortilla chips, and a sprinkle of fresh coriander for garnish.
