HOMEWRECKER BISCUITS

As Americans, our biscuits look a little different than the biscuits you’ll find on the supermarket shelves here…


But y’all, if you haven’t tried a buttermilk biscuit fresh from the oven, with a slab of butter, a heap of Homewrecker and a drizzle of honey, you haven’t lived…


And of course, our biscuits wouldn’t be complete without a little extra homewrecker added into the mix… 

Ingredients:

Serves 4

  • 425g plain flour

  • 2 tbsp baking powder

  • 2 tsp sugar

  • 1 tsp salt

  • 115g fridge cold butter

  • 300 ml buttermilk

  • 100g Homewrecker Pimento Cheese

Method

  1. Preheat the oven to 200°C and line a baking tray with greaseproof paper.

  2. Place the dry ingredients in a large bowl and whisk to combine.

  3. In a separate bowl, whisk the buttermilk and Homewrecker.

  4. Add the butter to the dry ingredients and rub between your fingertips until the mix resembles breadcrumbs.

  5. In three stages, add the buttermilk/cheeky mixture and mix with your hands until fully incorporated.

  6. Tip out onto a floured surface and knead for a few minutes until the mixture is smooth.

  7. Roll out the dough to a large square, fold the bottom third up to the middle and the top third down to form a book fold, roll out again and repeat one more time.

  8. Roll the dough out to about an inch thick, grab a cookie cutter, and press out your biscuits.

  9. Place on the lined tray, brush with melted butter, top with flaky salt, and bake for 20 minutes, until golden brown.

  10. Serve warm as a side to your favourite savoury dish or simply enjoy with butter (and extra Homewrecker and a drizzle of honey if you wish)!
