homewrecker stuffed pasta bake

This stuffed pasta bake is gonna be on your meal plan on repeat, because it’s super quick and equally delicious.

Ingredients:

Serves 1

  • 15 jumbo pasta shells

  • 250g ricotta cheese

  • 200g Homewrecker Pimento cheese

  • 200g spinach, wilted, drained, and chopped

  • 30g basil, chopped

  • 1 egg

  • 1 jar of tomato pasta sauce

  • Parmesan cheese

  • Panko breadcrumbs

Method

  1. Preheat your oven to 180°C

  2. In a mixing bowl, combine the ricotta cheese, Homewrecker Pimento cheese, wilted spinach, chopped basil, and egg. Mix until well combined.

  3. Stuff each pasta shell with the cheese and spinach mixture, ensuring they are evenly filled.

  4. Pour the tomato pasta sauce on the base of the dish.

  5. ⁠Arrange the stuffed shells in the prepared baking dish.

  6. Sprinkle grated Parmesan cheese and panko breadcrumbs over the top of the shells.

  7. ⁠Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the shells are cooked and heated through and the cheese is melted and bubbly.

  8. ⁠Remove the foil and bake for an additional 5-10 minutes, or until the breadcrumbs are golden brown and crispy.

  9. ⁠Serve the stuffed shells hot, garnished with fresh basil leaves and additional grated Parmesan cheese if desired!
