leek, spinach and homewrecker gnocchi bake
Ingredients:
Serves 1
1 tbsp butter
2 large leeks
4 cloves of garlic
1 heaped tbsp flour
350ml chicken stock
100g crème fraiche
100g Homewrecker Pimento Cheese
Spinach
500g gnocchi
Parmesan cheese
Panko breadcrumbs
Salt and Pepper
Method
Preheat that oven to 200°C fan.
Slice up them leeks into rounds. Mince up that garlic.
Sweat the leeks & garlic in butter with a pinch of salt.
Sprinkle in the flour and mix for 2-3 mins.
Pour in 350ml chicken stock, season with black pepper, and simmer for 10 mins to thicken.
Stir in the crème fraiche, Homewrecker, gnocchi, and spinach.
Simmer for 2 mins, then tip into a deep dish.
Cover with heaps of grated Parmesan and Panko.
Bake for 15 mins until golden and delicious.
