PIMENTO CHEESE CREAMED SPINACH
Ingredients:
Serves 4
15g butter
1 tbsp plain flour
100ml full-fat milk
50ml single cream
200g spinach (feel free to add more if you want a greener side dish!)
100g Homewrecker Pimento Cheese
Salt and pepper
Method
1. Heat butter in a saucepan, stir in plain flour, and cook for 2 minutes. Then slowly start to whisk in full-fat milk, cream & Homewrecker Pimento Cheese.
2. When it has all been incorporated, gently cook for 5 mins until the sauce has thickened.
3. Meanwhile, place spinach in a large colander.
4. Pour over a kettle full of boiling water until the leaves have wilted.
5. Place the spinach in a clean dishcloth, squeeze out any excess liquid, then roughly chop.
6. Stir into the sauce, gently heat & season well.
7. Serve!
