PIMENTO CHEESE CORNBREAD

This savory and moist cornbread is infused with the rich and bold flavors of pimento cheese, adding a Southern-inspired kick to your holiday table.

Ingredients:

makes 24 mini muffins

  • 100g Homewrecker Pimento Cheese

  • 65g plain flour

  • 65g polenta/cornmeal

  • 50g sugar

  • 1/4 teaspoon salt

  • 2 teaspoons baking powder

  • 1 egg

  • 60g butter, melted

  • 150ml single cream

  • 100g sweetcorn

Method

  1. In a large bowl, whisk together eggs and cream.

  2. Combine flour, polenta sugar, salt, and baking powder into the egg mixture.

  3. In a small saucepan, melt butter and add Homewrecker Pimento Cheese until softened.

  4. Mix Homewrecker Pimento Cheese and butter with all ingredients, and add corn last.

  5. Pour into greased mini muffin tins.

  6. Bake at 200 degrees for 10 minutes, or until golden brown. Serve warm.
